The fruit is sourced from low-density (4x2) 20-year-old vines in the Sidona region, grown in pure granitic soil. Hand-picked at 12 Baumé and whole bunch pressed with precision, the juice was fermented wild in seasoned French oak at cool temperatures to retain purity and lift.
